10 Sept - Spiced Pumpkin Butter

  • 2 15oz cans pumpkin
  • 1 1/4 cups pure maple syrup
  • 1/2 cup apple juice
  • 2 tbsp lemon juice
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

In a heavy pot, combine all ingredients. Bring to a boil, then reduce heat to a simmer. Simmer for 25 minutes uncovered. If the mixture splatters too much, reduce the heat further. Stir continuously. Can be frozen for longevity, otherwise will last about 1 week in the fridge.
